The sip and bite or Sicilian Cipollate are a typical meat recipe from my Sicily, super easy, quick to prepare, and too, too good! Easter Monday, April 25th, and May 1st are approaching, and for us, there is no picnic without sip and bite! These delicious meat rolls are called that way because they are so tasty that you eat them in company, accompanied by a good glass of wine or a nice cold beer (in Trapani, Palermo, and around they are called, indeed, sip and bite, in the area of Catania, cipollate), they are made with two main ingredients spring onions and fresh bacon (and I stress fresh, not cured meat). Try these delicious sip and bite immediately, they are simply irresistible, golden, crispy, and fragrant, they will become a must for your grills!

- 16 spring onions
- 16 slices fresh bacon
- to taste salt
- to taste black pepper
Steps
The sip and bite or Sicilian cipollate are super easy and quick to prepare. First, season the slices of fresh bacon with salt and black pepper.
Clean the spring onions, remove the first layer of leaves, the outermost one, the roots, and the longer part of the stem.
Roll each slice of bacon around a spring onion, and our sip and bite are ready. Being one of the most typical recipes of Sicilian grills, they should be cooked on the grill or barbecue until golden, but at home, it doesn’t seem appropriate to start a fire :D, so you can cook them in a preheated oven at 392°F for 20/25 minutes, or even better, in an air fryer, always at 392°F for about twenty minutes, they should be golden and well-roasted.
Tips:
The sip and bite or Sicilian cipollate should be cooked and eaten hot. Make sure to use fresh bacon, not cured meat, as the latter is too thin and would burn during cooking, leaving the onions raw.
