Skillet cookies are quick, delicious, and clever cookies that don’t require an oven, perfect for summer. This is a type of cookie I love, and despite the heat, I wanted to make them for breakfast. I perfected a recipe to cook them in a pan and they turned out fantastic; skillet cookies are rich in chocolate chips, soft and crispy, cook in just 12 minutes, and will be gone in no time. They’re delicious on their own and perfect for dipping in milk or cappuccino, they are truly a game-changer!

Ingredients
- 2 cups all-purpose flour
- 3/4 cup dark chocolate chips
- 7 tbsp butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1 pinch salt
- Half sachet baking powder
- to taste vanilla
Steps
Skillet cookies are super easy and quick to make. First, place the flour, granulated sugar, brown sugar, baking powder, and a pinch of salt in a bowl and mix. Add the vanilla, butter at room temperature, and egg to form a soft and homogeneous mixture, then incorporate the dark chocolate chips.
Take small pieces of dough, form balls, and flatten them in the palm of your hand (they should be about half an inch thick).
Place the skillet cookies on a preheated non-stick pan, cover with a lid, and let them cook over low heat for 7/8 minutes, flip them and continue cooking for another 5 minutes.
Let the skillet cookies cool before enjoying or storing them.
Tips:
Skillet cookies keep at room temperature for 5/6 days. I don’t recommend replacing butter with oil. Of course, you can also bake them in the oven (preheated to 350°F for 20/25 minutes) or in an air fryer (at 350°F for 12/15 minutes).
