The layered flatbread in the skillet is a “fake” crispy phyllo dough flatbread, super quick and clever, prepared in just a few minutes with few and simple ingredients. By now you know I love phyllo dough, I use it in many ways, for both sweet and savory recipes. I didn’t have bread or flour to make it, so I tried to make a layered flatbread without oven and without leavening, cooked in a skillet, and it turned out amazing! The layered flatbread is perfect as a substitute for bread, piadine, bruschetta, or similar, super good and super versatile, perfect for accompanying cold cuts, cheeses, mousses, creams, salads, and big salads, ideal for an aperitif, a party, or a buffet, it will be one of those summer recipes you will repeat most often and that will become one of your favorites!

Ingredients
- 7/16 cup milk
- 2 tbsp extra virgin olive oil
- 1 package phyllo dough (about 11 sheets)
- 1 egg
- to taste salt
- to taste black pepper
Steps
The skillet layered flatbread is super easy and quick to prepare, first put the milk, extra virgin olive oil, egg, salt, and black pepper in a bowl and mix with a fork.
Grease a skillet with a drizzle of oil (my skillet was 11 inches), place a sheet of phyllo dough on the base and brush it with some of the previously made mixture.
Layer a second sheet of phyllo dough, brush it with the mixture, and continue this way until all ingredients are used up.
After placing the last sheet of phyllo dough, fold the edges towards the center, brush the surface with the remaining mixture, cover with a lid, and let the layered flatbread cook over medium-low heat for about ten minutes, it should be golden.
Flip the layered flatbread as if it were an omelet and continue cooking for another 10 minutes less.
Tips:
The layered flatbread can be kept at room temperature for a few hours or in the fridge for a couple of days. Heat it in the oven or air fryer to make it good and crispy again, like freshly made.
