Steps
The spinach and feta rustic pie with cooked ham and walnuts is very simple and quick to prepare. First, clean the spinach well and dry them.
Pour the extra virgin olive oil into a pan and sauté the chopped garlic, add the spinach, let them cook for a few seconds, and season with salt, black pepper, and nutmeg.
Using kitchen scissors, chop the spinach, add the chopped cooked ham, chopped walnut kernels, and mix everything together.
Fill half of the pastry with some seasoned spinach, add some grated Parmesan cheese, crumbled feta, more spinach, feta, and close the rustic pie, sealing the edges well, folding them inward.
Brush the surface with the beaten egg, make slits with a knife, add some sesame seeds, and bake the spinach and feta rustic pie in a preheated oven at 392°F (200°C) for about 25 minutes.
Notes:
The spinach and feta rustic pie can be kept at room temperature for a few hours or in the fridge for a couple of days. If you don’t want to add cooked ham and/or walnuts, you can leave them out without any issues. If you want a cheesy filling, you can also add pieces of scamorza or mozzarella.
