The sweet crispy wafers are quick and easy treats with a super creamy center that you can personalize however you like. I chose Nutella and pistachio cream, but any spreadable cream, pastry cream or jam will do. I’d wanted to make them for a while and finally decided to try a very quick and clever method to make them, leaving them nice and crispy. Needless to say, they’re addictive — these sweet crispy wafers are truly irresistible, you’ll make them again and again!

Ingredients
- 3/8 cup all-purpose flour
- 3/8 cup powdered (confectioners') sugar
- 3 1/2 tbsps neutral vegetable oil
- 2 tsp vinegar (see notes)
- 2 egg whites
- 1 pinch salt
- to taste vanilla
- to taste Nutella, pistachio cream or other filling
Steps
Sweet crispy wafers are very simple and very quick to prepare. First, put the egg whites, powdered sugar, vinegar (I used distilled/alcohol vinegar—make sure it’s food grade; you can also use white or apple cider vinegar), a pinch of salt in a bowl and mix.
Add the vanilla, the flour and the vegetable oil and mix well until all the ingredients are combined.
Take a little of the batter with a pastry brush and, on a nonstick pan already heated (do not oil it), draw a circle. Let the wafer cook for a couple of minutes over medium-low heat; as soon as it turns golden, carefully flip it and continue cooking for another 1–2 minutes.
Flip the wafer again, take a glass straw (or the handle of a wooden spoon, or a chopstick or something similar) and place it on the edge, quickly roll the wafer while it’s still hot and let it cool; then you can slide it off. This step is simple but quick — easier said than done the first few times.
Continue this way to make all the sweet crispy wafers. They are now ready to be filled as you like: you can use Nutella, pistachio cream, jam, ricotta, pastry cream or other spreadable creams. Pipe the filling in using a piping bag.
Tips:
The sweet crispy wafers keep at room temperature for 3–4 days; store them in a bag or airtight container. These wafers are sensitive to humidity and may soften a bit over time. For this reason, I recommend filling them at the last minute or shortly before serving. If they soften and you want to make them crispy again, heat them in an air fryer at 356°F for 2–3 minutes or in the oven, also at 356°F, for 5 minutes. The vinegar helps give extra crispness; I recommend food-grade distilled/alcohol vinegar because it does not alter the taste of the wafers. Instead of vinegar, you can also use a neutral-flavored liqueur or spirit of your choice.
