Tasty baked potatoes are a truly delicious recipe. For dinner, I wanted to prepare a potato side dish, so I grabbed some ingredients I needed to use up and made these super tasty little “fridge-clearing” and “dinner-saving” potatoes, in no time and without even having to parboil them. Tasty baked potatoes with onion, olives, speck, breadcrumbs, and cheese are perfect as an appetizer, side dish, or main course. Made this way, they are super flavorful with a trick that makes them crispy on the outside and soft on the inside, as if they were fried. Ingredients
- 1.1 lbs potatoes
- 3.5 oz speck
- 1.75 oz grated Parmesan
- 0.9 oz breadcrumbs
- 2 cloves garlic
- 1 chili pepper
- to taste extra virgin olive oil
- to taste salt
- to taste spices
Steps
Tasty baked potatoes are very simple and quick to prepare. First, pour some oil into a baking tray, just enough to grease the entire base of the tray. Add the garlic and chili pepper and place in a preheated oven at 356°F for about 5 minutes, so the oil will heat up and the garlic and chili pepper will start to sizzle. Meanwhile, peel the potatoes and cut them into small pieces.
Take the tray out of the oven, remove the garlic and chili pepper, add the potatoes, season with salt, give them a stir, and bake for about 25 minutes without stirring, so a nice crust forms.
Take the tasty baked potatoes out of the oven, add the onion sliced very thinly (use a mandoline), the speck, pitted olives, breadcrumbs, grated Parmesan, spices to taste, and mix everything together. Bake the tasty baked potatoes for another 5 minutes, just enough time to let everything blend.
Notes:
Tasty baked potatoes can be stored at room temperature for a few hours or in the fridge for a couple of days. I used red onion, but white onion is also fine. Instead of speck, you can also use bacon.
