Yogurt Biscotti

The yogurt biscotti are light, delicious, and fragrant cookies, without butter and eggs. You already know I love this type of dessert, and today I wanted to share with you one of the sweet recipes I make most often, especially when I have some leftover yogurt. Yogurt biscotti can be mixed in 5 minutes with a fork, make a log, bake it, and then cut it into pieces; these are simple and tasty cookies that both adults and kids will love. They’re delicious on their own and perfect for dipping in milk, cappuccino, herbal tea, tea, or hot chocolate. Additionally, you can enrich them as you like with nuts or dried fruit or dark chocolate chips, or use yogurt in the flavor you prefer!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup plain yogurt (unsweetened)
  • 1/2 cup sugar
  • 5 1/3 tbsp vegetable oil
  • Half packet baking powder
  • 1 orange zest
  • 1 lemon zest
  • 1 pinch salt

Steps

  • Yogurt biscotti are super easy and quick to prepare. First, put the all-purpose flour, sugar, baking powder, a pinch of salt in a bowl, and mix with a fork.

  • Add the grated orange and lemon zest, vegetable oil, unsweetened plain yogurt, and form a soft and compact dough. Work it on a work surface, form a narrow and long log, and place it on a baking sheet lined with parchment paper. Bake it in a preheated oven at 356 degrees Fahrenheit for about 30 minutes until golden.

  • Remove the sweet log from the oven, let it cool slightly, and gently cut it into pieces about 3/4 inch thick. Bake the yogurt biscotti for another 10 minutes, just long enough to cook them better and make them crisp (not hard, please).

Notes:

Yogurt biscotti can be stored at room temperature for 5-6 days. For these cookies, you can also use fruit-flavored yogurt or any flavor you prefer. If it’s already sweetened, use only 1/3 cup of sugar in the dough (unless you prefer them slightly sweeter). You can customize the biscotti by adding nuts or fresh fruit or chocolate chips.
