The zucchini and onion fritters are delicious savory vegetarian fritters that can be made in just a few minutes without even pre-boiling the zucchini. Crunchy, soft, and extremely tasty, zucchini and onion fritters are prepared in just 10 minutes. They are ideal as an appetizer or side dish, but also as a main course, delicious even cold, perfect for an aperitif. Ingredients
- 1 2/3 cups all-purpose flour
- 1/2 cup water
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 2 zucchini
- 2 onions
- Half packet instant yeast for savory preparations
- to taste salt
- to taste black pepper
- as needed vegetable oil (for frying)
Steps
The zucchini and onion fritters are very simple and quick to prepare. First, place the water, eggs, grated Parmesan, flour, salt, and black pepper in a bowl and mix with a fork until you get a smooth batter.
Add the zucchini and onions sliced very thinly (I used a mandolin, if you don’t have one, cut slices about 1/16 inch thick with a knife) and mix them well into the batter.
Scoop a bit of the mixture with a teaspoon and drop it into hot oil, adjust the shape if necessary, and cook the zucchini and onion fritters over medium/low heat for 5/7 minutes per side until they are golden brown.
Drain the zucchini and onion fritters on absorbent paper and serve them.
Tips:
Zucchini and onion fritters can be stored at room temperature for a few hours or in the fridge for a couple of days. They cannot be baked or cooked in an air fryer.
