Zucchini Puff Pastry

The zucchini puff pastry is an easy, quick, and delicious savory pie made with puff pastry. I didn’t know what to prepare for dinner, had little in the fridge, and used the ingredients I had to make a tasty and delightful rustic flatbread. The zucchini puff pastry is ready in 10 minutes and is melty, creamy, and flavorful. Excellent hot and also very good cold, perfect as a main dish, for an appetizer, a buffet, a party, or as an appetizer, it will be gone in no time!

Ingredients

  • 7 oz feta
  • 5 oz cooked ham
  • 5 oz scamorza
  • 1 zucchini (large)
  • 1 sheet puff pastry (rectangular)
  • 1 tbsp extra virgin olive oil
  • to taste salt
  • to taste black pepper

Steps

  • ● The zucchini puff pastry is very simple and quick to prepare. First, clean the zucchini, slice them very thinly (I used a mandoline, but if you don’t have one, use a classic knife) and season them with oil, salt, and black pepper.

  • ● Unroll the sheet of puff pastry, fill it with slices of cooked ham, add crumbled feta, the zucchini, and fold the edges inward.

  • ● Bake the zucchini puff pastry in a preheated oven at 392°F (200°C) for 25-30 minutes, remove it from the oven, add diced scamorza, a bit of oregano and bake it again for a few minutes, just enough time to melt the cheese.

Notes:

The zucchini puff pastry can be kept at room temperature for a few hours or in the fridge for a couple of days. You can replace the ham with speck or omit deli meats for a vegetarian version. You can use any cheese you prefer instead of feta, such as stracchino, robiola, taleggio, spreadable, or other creamy cheeses to taste.
