Preparing ricotta cutlets in the air fryer is very simple and quick.
After thoroughly draining the ricotta from its water, place it in a bowl with cheese and salt, and mix well until you get a soft but homogeneous mixture.
With damp hands, take a small amount of the mixture, shape it into a patty, and then flatten it into a cutlet shape.
In a plate, add breadcrumbs, a pinch of salt, and preferred herbs; I added oregano and paprika.
Gently dip the cutlets first in the beaten eggs and then in the breadcrumbs.
Place them on the tray or basket of the air fryer, spray or drizzle with a little oil, and cook them for about 15 minutes at 356°F, turning them halfway through cooking.
