CHEESY STUFFED HAMBURGERS

  • 1 lb ground beef (about 450 g)
  • 2 eggs
  • 3.5 oz Galbanino cheese
  • salt
  • 2 tbsp Parmesan
  • 2 slices sandwich bread
  • as needed milk
  • extra virgin olive oil
  • garlic, rosemary, sage

Steps

  • Put the sandwich bread in a small bowl with a little milk, let it soften and then squeeze it well.
    In a large bowl combine: ground beef, eggs, Parmesan, salt and the squeezed sandwich bread.
    Mix everything with your hands until you get a homogeneous mixture.

  • Take a portion of the mixture and form a ball.
    Place it on a sheet of parchment paper, cover with another sheet and flatten it with your hand or the bottom of a glass.
    Remove the top sheet and place 1–2 slices of Galbanino in the center.

  • Cover with another ball of mixture and flatten again between two sheets of parchment paper.
    Use a round cutter (or a cup) to trim the burger and seal the edges well.
    Heat a pan with a drizzle of oil, a crushed clove of garlic, rosemary and sage.
    Lay the burgers in the pan and cook over medium heat, 4–5 minutes per side, until golden on the outside and the cheese inside is melty.

If you want an even richer filling, add a slice of cooked ham on top of the Galbanino.

For a lighter version, you can also bake them in the oven at 374°F for about 20 minutes.
