Ingredients
- 2 1/3 cups flour
- 6 tbsps butter
- 2 eggs
- 1/2 cup sugar
- lemon zest to taste
- 2 cups milk
- 1/2 cup sugar
- 4 egg yolks
- 1/3 cup rice starch
- 1 lb ricotta cheese
- lemon zest to taste

Steps
Place the flour in a mound, add the sugar, eggs, butter, and grated lemon zest.
Knead quickly
Form a ball and wrap it in plastic wrap. Refrigerate for 20 minutes.
In the meantime, prepare the cream by combining the egg yolks with the sugar
Stir until you obtain a creamy consistency
Add the rice starch and mix.
Heat the milk with the lemon zest
Add the egg cream and stir.
Let it cool
Add the ricotta to the cream
Roll out the shortcrust pastry in a buttered pan
Add the cream
Knead the leftover dough, roll it out, and cut it into strips
With a little water, wet the dough to help the strips adhere
Use a cookie cutter to cut the dough into desired shapes and, using a bit of water, make them stick to the strips.
Bake in the oven at 356°F for 30 minutes
