Creamy Bean Soup

Hi friend! Today I want to share with you a recipe that smells like home and tradition: creamy bean soup.

It is one of those simple, genuine, and super comforting dishes, perfect for cool days or when you want to pamper yourself with something warm and tasty. Bean soup is a classic of Italian cuisine, and this creamy version is truly irresistible.
The recipe for creamy bean soup is very easy and requires just a few ingredients.

Start by sautéing the shallot in a pan with a sprig of rosemary, which gives a wonderful aroma. Then add the tomato, fresh or pureed, and let it season. Separately, blend half of the already cooked beans to obtain a velvety cream. This cream is combined with the tomato along with vegetable broth, and everything is brought to a boil. At this point, add the pasta of your choice: ditalini, tubetti, or even broken pasta. When the pasta is almost ready, add the remaining whole beans and finish with a nice drizzle of extra virgin olive oil.
This creamy bean soup is perfect for those looking for a healthy, nutritious recipe rich in plant-based proteins. It is also ideal for those following a vegetarian diet and is great to prepare in advance and reheat when needed.
