Ingredients
- 50 g breadcrumbs
- 50 g parmesan
- 50 ml extra virgin olive oil + oil as needed in the pan
- 1 tablespoon parsley
- 1 lb potatoes

- cutting board
- absorbent paper for frying
Steps
To prepare crispy pan-fried sandy potatoes, start by peeling and washing the potatoes.
Slice them into rounds and when the water boils, cook them for 5/6 minutes in salted water. Drain and dry them well.
Meanwhile, in a bowl, combine the parmesan with breadcrumbs, oil, and parsley. Mix well.
Add the mixture to the cooked potatoes and mix it distributing evenly.
In a pan, heat some oil and when it’s hot, add the potatoes until they are nicely golden and crispy. The breadcrumbs will form a nice crust.
Drain on absorbent paper, salt, and… enjoy your meal!
