Homemade Pumpkin Buns

To make these soft pumpkin buns, cook the pumpkin until it’s soft. Dissolve the yeast in warm milk. Then add the egg and oil, mixing well. At this point, add the turmeric, which gives a nice golden color, and incorporate the flour with salt until a smooth dough is obtained. After a 3-hour rise, the dough is divided into portions, worked with folds, and shaped into small loaves. Each bun is tied with kitchen string to achieve the classic pumpkin shape.
After a second rise until doubled, brush with egg and bake in the oven at 347°F for about 25 minutes.

Ingredients

HOMEMADE PUMPKIN BUNS

  • 2 cups pumpkin
  • 4 cups flour
  • 0.4 oz brewer's yeast
  • 0.5 cups milk
  • 3 tbsps extra virgin olive oil
  • 2 eggs (1 for dough, 1 for brushing)
  • salt
  • 1 tbsp turmeric

Steps

  • Cut the pumpkin into pieces and cook until soft. Mash it with a fork and set aside.

  • Dissolve the yeast in warm milk, add the egg and oil, and mix well. Add the pumpkin.

  • Add the turmeric, flour, and salt, and knead until a smooth, homogeneous mixture is obtained.

  • Cover the dough with a sheet of plastic wrap and let it rise for 3 hours in a warm place.
    I kept it in the oven turned off with the light on.
    Once risen, take the dough and place it on an oiled cutting board.

  • Divide the dough into equal portions. For each piece, make the folds and form a small loaf.

  • Tie each loaf with kitchen string to obtain the shape of a pumpkin.
    Cover and let rise until doubled.

  • Brush the surface with beaten egg.
    Bake in a static oven at 347°F for 25 minutes, until golden.
