Steps
In a saucepan, heat milk, butter, and a pinch of salt. Once it starts to boil, remove from heat and pour in the rice flour and cornstarch. Mix the mixture until you obtain a homogeneous and compact dough.
Wrap the dough in a sheet of plastic wrap and let it cool.
Meanwhile, prepare the béchamel: in a saucepan, heat the milk along with nutmeg and salt.
In another saucepan, melt the butter over low heat.
Once the butter is melted, add the flour and mix. Add the hot milk.
Continue to stir over low heat until the desired consistency is reached.
Place the dough on a floured surface and roll it out with a rolling pin to a thickness of about 1/8 inch. Use a pastry ring or a cup to cut out circles.
Fill with béchamel and diced ham, then fold the dough over itself to form a half-moon.
Dip the sofficini in egg and then in breadcrumbs, and fry them in hot oil on both sides.
Your homemade sofficini are ready! 😊
