  • 2 1/2 cups all-purpose flour
  • 2/5 cup sugar
  • 7 tbsp butter
  • zest of one lemon
  • 2 eggs
  • 1 1/2 cups apricot jam

Steps

  • To make the jam tart, start by preparing the shortcrust pastry: on a work surface, arrange the flour with the sugar and lemon zest. Add the butter cut into pieces and roughly mix with the dry ingredients.

  • Add the eggs and mix with the tips of your fingers until you obtain a homogeneous dough.
    Wrap the shortcrust pastry in plastic wrap and keep it in the fridge for 30 minutes. After resting, roll out the pastry to a thickness of about 1/8 inch

  • Place it in a greased and floured tart pan, trim the edges, and prick the bottom. Add the jam.

  • Roll out the remaining dough and cut it into strips. Wet the edges of the tart and place the strips diagonally, crossing them.

  • Bake the jam tart in the oven at 356°F (180°C) for about 30 minutes.
    The tart is ready!
