If you want to make it richer, you can add crispy bacon, grated cheese, or a sprinkle of nutmeg. I added some crumbled amaretti and a tablespoon of cream cheese.

Steps

  • Preparing pasta with pumpkin is very simple: start by thinly slicing an onion and cleaning the pumpkin by removing the skin and internal filaments. Cut the pumpkin into cubes.
    In a pan, pour a drizzle of oil and add the onion.

  • Once the onion is cooked, add the pumpkin cubes and sage leaves, sauté for a few minutes.
    Pour a glass of water or broth into the pan and adjust the salt.
    Meanwhile, put the water on the heat, bring to a boil and cook the pasta according to the time indicated on the package.
    When the pumpkin is cooked, remove the sage and add the cream cheese and, if necessary, a little pasta cooking water, stirring until a cream is obtained.
