- 1 lb potatoes
- 13 oz sausage
- 1.75 oz Parmesan cheese
- breadcrumbs as needed
- 3 eggs

Here is the procedure:
To prepare the potato and sausage balls, first boil the potatoes in plenty of water
Mash them while they are still hot
Add salt, parsley, Parmesan cheese, and the egg to the potatoes
Mix the dough well.
Separately, remove the skin from the sausages and cut them into fairly large cubes
(I divided one sausage into 3/4 pieces)
Cook them in a non-stick pan
Take a generous spoonful of dough to prepare the potato and sausage balls, hold it in a damp hand, and make a hole in the center.
Fill the hole with a piece of cooked sausage and close it with more dough.
With your hands, shape them into a homogeneous oval.
