Ingredients
- 3/4 cup cooked pumpkin
- 4 eggs
- 2/3 cup sugar or erythritol
- 1 cup cornstarch
- 1 1/4 cup all-purpose flour
- 1/3 cup sunflower oil
- 1/3 cup milk
- 1 tablespoon vanilla extract

Steps
Cut the pumpkin into pieces after removing the skin and inner fibers.
Bake it in the oven for about 30 min at 356°F
In a bowl, place the eggs with the sugar, mix and add the dry ingredients: flour, cornstarch, and baking powder.
Once well blended, add the oil, milk, blended pumpkin, vanilla extract, and half of the chocolate chips.
Mix until you obtain a smooth and homogeneous dough.
Transfer the batter into a loaf cake mold and sprinkle the remaining half of the floured chocolate chips on top to prevent them from sinking during baking.
