Pumpkin Stuffed Meatloaf

The beauty of meatloaf is that it can be made in a thousand ways..I made it with pumpkin and cheese and it’s spectacular!

Ingredients

  • 1 lb mixed ground meat
  • 1 slice of sandwich bread
  • 2 eggs
  • 3 tbsps grated Parmesan cheese
  • 7 oz diced pumpkin
  • 5 oz galbanino or melting cheese
  • 1 garlic clove
  • to taste parsley, oil, salt, and breadcrumbs

Tools

  • Non-stick baking trays loaf pan
  • Oven Electrolux oven

Steps

  • Heat a drizzle of oil in a pan and add the pumpkin, salt, and some parsley

  • Cook with a little broth if necessary.
    Meanwhile, combine the meat with Parmesan cheese, salt, parsley, one egg, and the sandwich bread previously soaked in a bowl with water.
    Spread the mixture on parchment paper, forming a rectangle.

  • Stuff with cooked pumpkin and slices of galbanino, close it on itself using the parchment paper.

  • Compact the paper so the cheese doesn’t escape during cooking
    Brush with egg

  • Sprinkle with breadcrumbs and bake at 356°F for 40 minutes

  • Enjoy your meal
