Steps
Lightly flour the chicken slices. In a large pan, heat a drizzle of extra virgin olive oil and brown the escalopes on both sides until golden. Season with salt, remove them from the pan, and set aside.
In the same pan, add the garlic clove and sliced radicchio. Cook over medium heat for about 8-10 minutes, until the radicchio has softened, then remove the garlic.
Blend the cooked radicchio until smooth. Add the ricotta and mix well to obtain a creamy and velvety sauce. Season with salt and, if you like, pepper.
Return the escalopes to the pan and pour over the radicchio and ricotta cream. Let everything flavor together for a couple of minutes on low heat.
