Ricotta and Spinach Patties in Air Fryer

Ingredients

  • 10.5 oz spinach
  • 8.8 oz ricotta
  • 1 egg
  • 1 oz parmesan
  • 1.75 cups breadcrumbs
  • salt, nutmeg
  • as needed breadcrumbs
  • 2 eggs

Steps

  • Cook the spinach, drain them well, and chop finely.
    In a bowl, mix: spinach, ricotta, egg, parmesan, salt, pepper, and a pinch of nutmeg.
    Add the breadcrumbs gradually until the dough is soft but moldable.

  • Take portions of the dough and form small oval cutlets. Coat them in flour, beaten eggs, and finally in breadcrumbs, pressing well to adhere the breading.

  • Place the patties in the air fryer tray or basket without overlapping them.
    Lightly spray with oil.
    Cook at 374°F for 10-12 minutes, turning them halfway through cooking.

✨Variations:

With Mozzarella: add a cube in the center for a melty heart.

Without Eggs: replace with 1 tablespoon of chickpea flour + 2 tablespoons of water.

Flavored Breading: add sweet paprika or dried herbs to the breadcrumbs.
