Ingredients

  • 4 artichokes
  • 1 sheet of puff pastry
  • 1 cup ricotta
  • quarter cup of milk
  • 1 egg
  • 2 tbsps parmesan
  • salt to taste
  • half a lemon

Steps

  • Here is the procedure:

  • Clean the artichokes by removing the outer leaves, which are the toughest, and the tips. Cut them in half and also remove the central beard. Cut them into wedges and keep them for 15 minutes in water and lemon.

  • Place the artichokes in a pan and add enough water to slightly cover them.
    Cook for about 15 minutes.

  • Meanwhile, prepare the filling: in a bowl, add the ricotta, egg, salt, and parmesan. Mix well and add the galbanino cut into strips or another melting cheese.

  • Add the milk and mix.

  • Unroll the pastry over a pie dish and prick the bottom with a fork.

  • Add the ricotta filling and the cooked artichokes.

  • Brush the edge with milk and bake in the oven at 350°F for 30 minutes.
