Hi, today I made a savory red cabbage tart 🥬💜. It’s one of those simple, genuine and super versatile recipes, perfect for a light dinner, a lunch at the office or to bring to a picnic with friends. Red cabbage, with its bright color and delicate flavor, is the absolute star of this vegetarian tart, which is prepared in a few steps with ingredients we almost always have at home.
The base of the recipe is really easy: I washed the red cabbage, cut it into thin strips and wilted it in a pan with a drizzle of extra virgin olive oil and a clove of garlic. After adding a little water, I let it cook until it became tender and fragrant. Meanwhile, in a bowl I whisked two eggs with 1 cup of fresh ricotta, creating a smooth and tasty cream. Once the cabbage was cooked, I combined it with the egg and ricotta mixture… et voilà, the filling is ready!
