Sicilian Pesto

Hello friends! Today with my beautiful basil I prepared Sicilian pesto.

It’s a fresh and tasty sauce, perfect for quickly and deliciously dressing pasta. Unlike Genoese pesto, this Sicilian version uses tomatoes, almonds, basil, and ricotta. I also used leftover cashews, and the result was a creamy dressing with a delicate Mediterranean flavor. 😀
Making homemade Sicilian pesto is very easy. No cooking is required: just blend ripe tomatoes, almonds, fresh basil, ricotta, and extra virgin olive oil.

In just a few minutes, you have a sauce ideal for pasta dishes, bruschetta, or cold dishes.

Ingredients

  • 2 cups basil
  • 1/3 cup cashews
  • 1/3 cup almonds
  • 1/3 cup extra virgin olive oil
  • Half garlic
  • 1/3 cup Parmesan cheese
  • 1/2 cup ricotta
  • 10.5 oz tomatoes
  • salt

Steps

  • To prepare Sicilian pesto, start with the tomatoes: wash them, cut them in half, and remove their juice and seeds. Wash and gently dry the basil.
    In a food processor, place the tomatoes, basil, garlic, almonds, and cashews.

  • Blend and add grated cheese and ricotta.

  • After blending, add the oil and blend again for a few minutes until you get a creamy and homogeneous mixture.
    The Sicilian pesto is ready!
