Hello friends! Today with my beautiful basil I prepared Sicilian pesto.
It’s a fresh and tasty sauce, perfect for quickly and deliciously dressing pasta. Unlike Genoese pesto, this Sicilian version uses tomatoes, almonds, basil, and ricotta. I also used leftover cashews, and the result was a creamy dressing with a delicate Mediterranean flavor. 😀

- 2 cups basil
- 1/3 cup cashews
- 1/3 cup almonds
- 1/3 cup extra virgin olive oil
- Half garlic
- 1/3 cup Parmesan cheese
- 1/2 cup ricotta
- 10.5 oz tomatoes

Steps
To prepare Sicilian pesto, start with the tomatoes: wash them, cut them in half, and remove their juice and seeds. Wash and gently dry the basil.
In a food processor, place the tomatoes, basil, garlic, almonds, and cashews.
Blend and add grated cheese and ricotta.
After blending, add the oil and blend again for a few minutes until you get a creamy and homogeneous mixture.
The Sicilian pesto is ready!
