- 2/3 cup water
- 1/3 cup rice
- lemon zest

- 2/3 cup water (for choux pastry)
- 3/4 cup flour
- 2 eggs
- 1 teaspoon sugar
- 2 tablespoons butter
- oil for frying
Steps
Place the milk and water in a saucepan
add the rice and lemon zest with the teaspoon of sugar.
Cook the rice, stirring, until all the liquid is completely absorbed.
Remove the cooked lemon zest and add the teaspoon of vanilla and grated lemon zest
In another pot, put the water with the teaspoon of sugar and the butter
When the butter has melted, add all the flour
stir continuously until a smooth dough without lumps forms.
Place the dough in a bowl and gradually add the beaten eggs.
Let them be completely incorporated.
Add the cooked rice
With the help of two spoons, fry the fritters in hot oil.
Drain on absorbent paper and roll in sugar.
