Ingredients

  • 2/3 cup milk
  • 2/3 cup water
  • 1/3 cup rice
  • lemon zest
  • 1 teaspoon sugar
  • 1 teaspoon vanilla
  • 2/3 cup water (for choux pastry)
  • 3/4 cup flour
  • 2 eggs
  • 1 teaspoon sugar
  • 2 tablespoons butter
  • oil for frying

Steps

  • Place the milk and water in a saucepan

  • add the rice and lemon zest with the teaspoon of sugar.

  • Cook the rice, stirring, until all the liquid is completely absorbed.

  • Remove the cooked lemon zest and add the teaspoon of vanilla and grated lemon zest

  • In another pot, put the water with the teaspoon of sugar and the butter

  • When the butter has melted, add all the flour

  • stir continuously until a smooth dough without lumps forms.

  • Place the dough in a bowl and gradually add the beaten eggs.
    Let them be completely incorporated.

  • Add the cooked rice

  • With the help of two spoons, fry the fritters in hot oil.

  • Drain on absorbent paper and roll in sugar.
