BAKED STUFFED PUMPKIN: tasty and scenic fall recipe

The pumpkin is undoubtedly the undisputed queen of autumn, and when its time comes… I can’t resist! Today, I’ll bring you into the kitchen with me to prepare a delicious baked stuffed pumpkin, perfect to serve as a main dish, maybe for a family dinner or to impress friends with something scenic but very simple. With its sweet taste and the possibility to stuff it in a thousand different ways, pumpkin lends itself to many variations, and this is one of my favorites.

Ingredients

  • 1 delica pumpkin
  • to taste oil and salt
  • 11 oz fresh sausage
  • 3.5 oz gorgonzola and mascarpone
  • 3.5 oz shredded mozzarella for pizza
  • 0.85 cups béchamel sauce

Tools

  • Aluminum foil

Steps

  • Wash the pumpkin and cut off the top with the knife. Remove all seeds. Season the inside of the pumpkin with oil and salt and set it aside.

  • In a bowl, mix the sausage with the cheeses and béchamel sauce.

  • Fill the pumpkin with the prepared filling.

  • Close the pumpkin with parchment paper and aluminum foil to form a pouch.

  • Place the pumpkin in the baking dish and bake for 50 minutes at 392°F. Open the pouch, add a drizzle of oil, and continue cooking for another 10 minutes.

  • Serve hot or cold.
