Today for snack I prepared bread swirls. Easy and quick, good both filled with salami and with Nutella. The dough is the classic one from my Civraxiu Sardo with Sourdough, foolproof. Ingredients
- 3.5 oz sourdough (Refreshed and doubled)
- 1 cup re-milled durum wheat semolina
- 1 cup semolina
- 1 cup all-purpose flour
- 1 1/2 cups water
- 2 tsp salt

Steps
I dissolved the sourdough in the water
I added the flours.
I mixed until all the water was absorbed and let it rest for 30 minutes.
Then I added the salt.
I then worked it by hand for about 5 minutes, to absorb the salt. Then I did a round of three folds. I repeated them 3 times, every 15 minutes.
I let it rise until doubled, divided the dough in two, used one part for bread and the second part for the swirls.
I rolled out the swirls part with the rolling pin and with the help of the pizza cutter I cut many strips.
Then I rolled each strip.
And I made many small bites
I let them rise in the tray until doubled, then brushed with a brine of water, oil, and salt and baked at 392°F for about 20 minutes.
