Cold Pasta with Zucchini

Given the zucchini-rich season and considering it’s 104 degrees in the shade, today for lunch I opted for a cold pasta dish. Really, really good. It can be prepared in just a few minutes, just the time it takes to cook the pasta. I chose smooth penne, but you can use any pasta shape you like.

Ingredients

  • 1 zucchini
  • 2 tomatoes
  • 1.76 oz soft cheese
  • 7.05 oz smooth penne
  • to taste oil and salt

Tools

  • Air Fryer

Steps

  • Wash the zucchini, dice it, and cook it in an air fryer for about 15 minutes with a little oil and salt.

  • Meanwhile, boil the pasta as indicated on the package and in a bowl dice the tomatoes and cheese.

  • Add the zucchini to the bowl of tomatoes and cheese, and mix well, adjusting with oil and salt.

  • Drain the pasta al dente and add it to the prepared dressing. Mix and let it cool before serving.
