Eggs with Zucchini in a Pan

Today I prepared eggs with zucchini in a pan. A light and tasty main dish. It’s very easy to prepare and doesn’t require much time in the kitchen. In fact, it can be prepared in just a few minutes. I cut the zucchinis into julienne strips with a mandoline, but you can also cut them into chunks or slices. The choice is yours. If you love zucchinis like I do, here are some other tasty ideas.

Ingredients

  • 1 zucchini
  • 2 eggs

Steps

  • Slice the zucchini with the mandoline and sauté them with half a chopped onion.

  • After 10 minutes, when they have softened, season with salt and add the eggs. Finish cooking and serve.
