Today I had some leftover sourdough discard, and since I had no idea what to make for lunch, I decided to prepare some fake flatbreads. What can I say? Delicious, my family loved them. This will definitely be a recipe I’ll make very often. I filled them with what I had at home, but you can fill them with whatever you like. You might also be interested in;

Ingredients
- 100 g sourdough discard
- 2 tbsp lard
- 1 tsp salt
- 1 1/2 cups all-purpose flour
- 1 1/2 cups semolina flour
- 1 cup water
- as needed slices of mortadella
- as needed slices of cooked ham
- as needed slices of cheese

Steps
Dissolve the sourdough discard in water in the bowl of the stand mixer.
Add the lard, salt, flour, and semolina.
Knead until the dough detaches from the sides of the bowl.
Let it rest for about an hour.
After resting, divide the dough into 4 balls.
Roll out the balls with a rolling pin until thin.
Cook the fake flatbreads in a pan for about 3/4 minutes on each side.
Season as desired.
