I love eggplants, and I realized the season is ending and I’ve cooked them in every possible way but not as I usually do. Flavorful in air fryer. This recipe is very simple, very quick, but most of all delicious. If the eggplants are seedless and sweet like mine, you’ll eat them by the pound. Ingredients
- 3 eggplants
- as needed olive oil
- as needed salt
- as needed olive oil
- 1 bunch parsley
- 2 cloves garlic
- A few leaves fresh basil

Steps
Cut the eggplants into wedges, season them with oil and salt, and cook in the air fryer for 20 minutes at 392°F.
Separately, prepare a mince with parsley, garlic, and basil. Add the oil and adjust with salt if necessary.
When the eggplants are cooked, season them with the prepared mince and serve.
Good both hot and cold.
