I love focaccia with onions, I prepare it very often, especially when I have guests over for dinner, it’s delicious, crunchy on the outside, soft and airy on the inside. As a base, I always use my well-tested Focaccia 1000 Bubbles. The result is guaranteed.

Ingredients
- 4 cups all-purpose flour
- 1.7 cups water
- 1 tbsp salt
- 2 tsp fresh yeast
- 3 tbsp extra virgin olive oil
- 1 large onion
- as needed extra virgin olive oil
- as needed salt

Steps
In the bowl, pour the water, sugar, and yeast. Dissolve well by stirring.
Add the flour and mix until all the water is absorbed. Let rest for 15 minutes.
Add the oil and salt and mix well until absorbed. Let rest for another 15 minutes.
Then do 3 sets of folds in the bowl, 15 minutes apart. Bring the ends of the dough to the center. Let it rise until it doubles.
Meanwhile, as the focaccia dough rises, clean and slice the onion, and stew it with a little oil and salt in a pan.
When the focaccia dough has risen, transfer it to a greased baking tray, and stretch it out well with oiled hands. Let it rest for another 10 minutes. Meanwhile, preheat the oven to 392°F (200°C).
Add the onions to the focaccia and bake at 392°F (200°C) for about 30 minutes.
