Fresh Green Egg Pappardelle with Sausage Sauce

Today for lunch I prepared fresh green egg pappardelle with Sausage Sauce. Delicious. As a base, I used Colored Fresh Egg Pasta with spinach. Delicious and especially easy and quick to prepare, they can also be made the day before. I used my pasta maker, but if you’re skilled, they can easily be made by hand or using a pasta roller.

  • 17.6 oz green pappardelle
  • as needed sausage sauce
  • as needed grated cheese

Steps

  • Prepare fresh green egg pasta as per recipe. Wrap it with plastic wrap and let it rest in the fridge for about 30 minutes.

  • In the meantime, prepare the sausage sauce, again as per recipe.

  • Prepare the pappardelle, and once the sauce is ready, boil them in plenty of salted water for about 10 minutes.

  • Season the pappardelle with the sausage sauce, add a generous handful of grated cheese, and serve hot.
