Today for lunch I prepared fresh green egg pappardelle with Sausage Sauce. Delicious. As a base, I used Colored Fresh Egg Pasta with spinach. Delicious and especially easy and quick to prepare, they can also be made the day before. I used my pasta maker, but if you’re skilled, they can easily be made by hand or using a pasta roller.

Steps
Prepare fresh green egg pasta as per recipe. Wrap it with plastic wrap and let it rest in the fridge for about 30 minutes.
In the meantime, prepare the sausage sauce, again as per recipe.
Prepare the pappardelle, and once the sauce is ready, boil them in plenty of salted water for about 10 minutes.
Season the pappardelle with the sausage sauce, add a generous handful of grated cheese, and serve hot.
