Fresh Saffron and Bell Peppers Pasta

Today I made fresh saffron pasta, delicious. I decided to make mini tortiglioni and cook them with bell peppers. Delicious. To make fresh egg pasta, I used my Colorful Fresh Egg Pasta dough, which always brings me great satisfaction. I opted for egg pasta, but you can make a simple dough of Fresh Pasta without eggs, 100% semolina. It’s up to you. For the mini tortiglioni, I used my pasta maker, but you can also choose a different shape.

Ingredients

  • 21 oz fresh saffron pasta
  • 3 bell peppers
  • 1/2 chopped onion
  • 2 cloves minced garlic
  • to taste oil and salt

Steps

  • Shape the pasta and set it aside.

  • Clean and wash the bell peppers, cut them into strips, and cook them with the chopped onion and minced garlic.

  • Then cook the pasta in plenty of salted water.

  • Then transfer the pasta to the bell peppers, mix, and serve.
