I opted for egg pasta, but you can make a simple dough of Fresh Pasta without eggs, 100% semolina. It’s up to you. For the mini tortiglioni, I used my pasta maker, but you can also choose a different shape.

- 21 oz fresh saffron pasta
- 3 bell peppers
- 1/2 chopped onion
- 2 cloves minced garlic

Steps
Shape the pasta and set it aside.
Clean and wash the bell peppers, cut them into strips, and cook them with the chopped onion and minced garlic.
Then cook the pasta in plenty of salted water.
Then transfer the pasta to the bell peppers, mix, and serve.
