Fried Dumpling without Lard

Today I made Fried Dumpling, I didn’t use homemade lard as I usually do, but rather olive oil. The result was still excellent, my guests appreciated it.

I served them with a nice platter of cured meats and cheeses, really spectacular. In short, you will make a great impression with your friends at the table, try them yourself and see if I’m right!!

Ingredients

  • 2 cups all-purpose flour
  • 2 cups re-milled durum wheat semolina
  • 1 1/4 cups water
  • 2 tsps salt
  • 1 tsp sugar
  • 3 tbsps extra virgin olive oil
  • 10 g fresh yeast
  • to taste oil for frying

Steps

  • In the bowl of the stand mixer, dissolve the yeast with the water and sugar.

  • Add the flour and semolina and start kneading.

  • Add salt and oil and continue kneading for at least 15 minutes.

  • Transfer to the work surface, the dough will be very soft, but do not add flour. Form a ball and let it double in size.

  • Once the dough has risen, transfer it to the work surface and divide it into two parts. Roll them out with a rolling pin and use the pastry cutter to cut small diamonds.

  • Fry in hot oil, drain on absorbent paper, and serve with cold cuts and cheeses.
