Today I made Fried Pizza Balls. I wanted to prepare an unconventional appetizer and present it to my guests with a nice platter of cold cuts and cheeses. I must say they loved it, they are delicious, you can’t stop at just one.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups re-milled durum wheat semolina
  • 1 1/4 cups water
  • 2 tsps salt
  • 1 tsp sugar
  • 3 tbsps extra virgin olive oil
  • 0.35 oz fresh brewer's yeast
  • as needed vegetable oil for frying

Steps

  • In the bowl of the stand mixer, add water, sugar, and yeast and let it dissolve by running the mixer on low speed for a few minutes. You should use the dough hook for this recipe.

  • Add the flour and semolina and start kneading for a few minutes, still at low speed.

  • Add the salt and oil and increase the speed. Knead until the dough detaches from the sides.

  • Transfer the dough to a bowl and let it rise until it doubles in size.

  • Take the risen dough and form tiny balls, and let them rest for 10 minutes (the time needed to heat the oil).

  • Fry them in hot oil until golden brown, stirring occasionally.

  • Season with salt and serve hot or cold with cold cuts and cheeses.
