Today I prepared fried pizza breadsticks, an appetizer different from the usual. Delicious and perfect to serve with a nice platter of cold cuts and cheese. Try them because they are really good. One leads to another. I used the simple pizza dough, but if you want, you can flavor it with spices and herbs.

Ingredients
- 2 cups all-purpose flour
- 2 cups re-milled durum wheat semolina
- 1.25 cups water
- 2 tsps salt
- 10 g fresh yeast
- 1 tsp sugar
- 3 tbsps extra virgin olive oil
- as needed oil for frying

Steps
In the stand mixer bowl, dissolve the yeast with water and sugar.
Add the flour and semolina and start kneading.
After a few minutes, add the oil and salt and knead until the dough detaches from the sides.
Form a ball and let it rise until it doubles, covered with cling film in a draft-free place.
When the dough is risen, roll it out with the rolling pin and use the pizza cutter to make strips. Let it rest for 10 minutes while you heat the oil.
Fry in hot oil until desired golden brown, stirring occasionally.
Drain on absorbent paper, adjust salt, and serve with a nice platter of cold cuts and cheese.
