Every time I make Carnival Chiacchiere, I always also make Fried Sweet Ravioli with Ricotta and Chocolate Cream, the dough is practically the same. For the filling, I used ricotta with chocolate chips, but you can also use jam or Nutella.
I always fry them, but they are also delicious baked. Try them.

Ingredients
- 10.5 oz chiacchiere dough
- 8.8 oz ricotta (I use sheep milk ricotta)
- zest of 1 lemon
- to taste chocolate chips
- 2 tablespoons sugar

Steps
The first thing to do is to prepare the chiacchiere dough, wrap it with plastic wrap, and let it rest in the fridge for about 30 minutes.
Now let’s prepare the cream. In a bowl, put the ricotta, sugar, and chocolate chips and mix.
Add the lemon zest and mix again. Let it rest in the fridge until ready to use.
Take small pieces of dough and roll them out with our pasta roller. If desired, a rolling pin can also be used.
Place a bit of ricotta cream in the center of each pasta strip.
Cover with another strip of pasta and use the pasta cutter wheel to form the ravioli. Fry in hot oil and once cooled, sprinkle with powdered sugar.
