Homemade Profiteroles – Spectacular and Delicious Dessert

Profiteroles are one of the most spectacular and delicious desserts you can serve at the table. Small cream puffs filled with chantilly cream (or whipped cream), covered with a cascade of dark chocolate that instantly creates a festive atmosphere. They are perfect to end an important meal or to indulge yourself with something special. I’ll explain how to prepare them at home easily, achieving a pastry-shop quality result!

Ingredients

  • 2/3 cup cup water
  • 1/3 cup cup butter
  • 1 pinch salt
  • 3 eggs
  • 1 cup cup flour
  • 2 cups cups milk
  • 1/2 cup cup unsweetened cocoa powder
  • 1/3 cup cup dark chocolate
  • 1/2 cup cup sugar
  • 1/4 cup cup flour
  • 1 1/4 cups cups diplomatic cream (or whipped cream)

Steps

  • In the Thermomix bowl, I poured the water, salt, sugar, and butter and cooked for 5 minutes at speed 1 at 212°F.

  • I added the flour and mixed for 20 seconds at speed 4. I let it cool for about 10 minutes.

  • Finally, I added the eggs and mixed for another 50 seconds at speed 5.

  • I transferred the mixture into the pastry bag and formed the cream puffs.

  • I baked for about 20/25 minutes at 392°F

  • In a bowl, we pour all the powders and the chopped chocolate and mix.

  • Add the boiling milk and stir to dissolve all lumps.

  • Transfer back to the heat and let thicken for a few minutes. Set aside.

  • Let’s prepare the cream, (recipe here) and fill the pastry bag.

  • Fill the cream puffs with the cream.

  • Cover the cream puffs completely with ganache and arrange them in a pyramid on a serving dish.

  • Finish the whole thing with tufts of diplomatic cream or whipped cream. Let them rest in the fridge until they are ready to be served.
