Homemade Profiteroles – Spectacular and Delicious Dessert

Profiteroles are one of the most spectacular and delicious desserts you can bring to the table. Small cream puffs filled with chantilly cream (or whipped cream), covered with a cascade of dark chocolate that immediately sets the festive mood. They are perfect for finishing an important meal or for treating yourself to something special. I’ll explain how to prepare them at home easily with pastry-quality results!

Ingredients

  • 2/3 cup water
  • 5 1/2 tbsp butter
  • 1 pinch salt
  • 3 eggs
  • 1 cup flour
  • 2 cups milk
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup dark chocolate
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1 1/4 cups diplomat cream (or whipped cream)

Steps

  • In the Bimby bowl, I poured the water, salt, sugar, and butter and cooked for 5 minutes at speed 1 at 212°F.

  • I added the flour and worked for 20 seconds at speed 4. I let it cool for about 10 minutes.

  • Finally, I added the eggs and worked for another 50 seconds at speed 5.

  • I transferred the mixture to the piping bag and formed the cream puffs.

  • I baked them for about 20/25 minutes at 392°F

  • In a bowl, we pour all the powders and the chopped chocolate and mix.

  • Add the boiling milk and stir to dissolve all lumps.

  • Transfer back to the heat and thicken for a few minutes. Set aside.

  • We prepare the cream, (recipe here) and fill the piping bag.

  • We fill the cream puffs with the cream.

  • We completely cover the cream puffs with the ganache and arrange them in a pyramid on a serving plate.

  • We finish with dollops of diplomat cream or whipped cream. Let them rest in the fridge until it’s time to serve them.
