After the great success of the Vanilla Spritz Cookies and Chocolate Spritz Cookies, I decided to try them with lemon. The lemon spritz cookies have that delicate lemon flavor that I love. They are delicious. The lemon spritz cookies are very easy to make. Just equip yourself with a cookie press and you’re good to go. Preparing them is very easy. I used the planetary mixer but common electric whisks are also fine. This time, however, in the dough, I used not only butter but also my Homemade Lard and I must say that the result was really very good. Crumbly, they melt in your mouth. Perfect to accompany tea or coffee.

Ingredients
- 2 cups all-purpose flour
- 1 egg
- 5 tbsp lard
- 5 tbsp butter
- 1/2 cup powdered sugar
- 1 lemon (the zest)
- as needed candied cherries

Steps
In the bowl of the stand mixer, whip the powdered sugar with the softened butter and lard. Beat for about 10 minutes until it is nice and fluffy.
Add the egg and continue beating for about 5 minutes until the egg is incorporated.
Add the lemon zest.
Lastly, add the flour. Beat for a few more minutes.
Transfer the mixture into the cookie press and choose the disk shape you like most. There are many options.
Form the cookies by simply pressing the handle. Continue this process until the dough is finished. Between fillings, you can also change shapes.
Add the candied cherries and let them rest in the fridge for 15 minutes. Then, bake at 356°F (180°C) for about 15 minutes.
Delicious.
They keep for days in a tin container.
