In this recipe, I propose a simple first course with a bold flavor: linguine with pumpkin cream and crispy speck. Ingredients
- 10.5 oz pumpkin
- 3.5 oz speck
- 1/2 white onion
- 12.4 oz linguine (or other pasta shape of choice)
- as needed oil and salt

Steps
In a pan without oil, cook the speck until it becomes crispy, then set it aside.
In the same pan, sauté the chopped onion with the pumpkin.
When the pumpkin is soft, blend it and return it to the pan with the speck.
Meanwhile, boil the linguine in plenty of salted water for the time indicated on the package. Once al dente, pour it into the pumpkin and speck cream. Sauté for 2 minutes and serve.
