Today I prepared the marinated rabbit with vegetables. A different way to eat it other than ‘alla cacciatora’. We like it a lot. It’s very easy to prepare and can be varied with the vegetables you like the most. For cooking, I chose the air fryer but oven cooking is also fine.

Ingredients
- 1 whole rabbit, raw
- 1 zucchini
- 1 white onion
- to taste oil and salt
- 2 leaves bay leaf
- 2 leaves sage
- 2 cloves garlic
- a few cherry tomatoes
- to taste chopped parsley

Steps
Cut the rabbit into small pieces and place it in a bowl.
Add the chopped vegetables, spices, and herbs, and mix. Add oil and salt and mix again. Let it rest in the fridge for a couple of hours, stirring occasionally.
Transfer the rabbit to the air fryer basket.
Cook for 25 minutes at 392°F.
Serve warm.
