Today I prepared the Savory Mini Focaccias with Sourdough but this time I added cherry tomatoes. Mini focaccias with cherry tomatoes are perfect for a snack. They are very tasty!!! If you don’t have sourdough, don’t worry, 5 grams of fresh yeast or 2 grams of dry yeast will work just fine. I love focaccia, here are some other ideas for making it.

Ingredients
- 8.8 oz remilled durum wheat semolina
- 8.8 oz all-purpose flour
- 1.5 cups water
- 3 tbsps extra virgin olive oil
- 1 tsp salt
- 5.3 oz sourdough starter
- as needed cherry tomatoes
- as needed oil and salt
- 1 pinch dried oregano

Steps
Dissolve the sourdough starter in a stand mixer with the water.
Add the rest of the ingredients and mix until everything is combined. It will take about 10 minutes.
Transfer to a bowl, cover with plastic wrap, and let rise until doubled. It will take about 3 hours.
Divide the dough into 8 balls and let them rise, covered with plastic wrap, until doubled.
Once risen, gently press them down with your fingers and add a bit of oil and salt.
Add the cherry tomatoes and let rest for 30 minutes. Then bake at 392°F (200°C) for about 20/30 minutes on the lower rack of the oven.
