Ingredients

  • 14 oz Digestive biscuits
  • 10.5 tbsp butter
  • 2 cups mascarpone
  • 7 oz Greek yogurt
  • 5 oz berry jam

  • Mold for tart with removable bottom, 10/11 inches

Steps

  • In the Thermomix bowl, insert the biscuits and blend for 20 seconds at speed 10.

  • Add the melted butter and mix for 10 seconds at speed 5.

  • Transfer 1/3 of the mixture into the mold and form the base. Let it rest in the fridge.

  • Meanwhile, prepare the cream. In the Thermomix bowl, insert the butterfly whisk then add the mascarpone, yogurt, and jam, and whip for 30 seconds at speed 4.

  • Retrieve the tart base and add 2 tablespoons of jam.

  • Add the cream and level it well with a spatula.

  • Cover with the remaining biscuits. Store in the fridge until ready to serve.
