Ingredients
- 4 cups all-purpose flour
- 1.5 cups water
- 2.5 tsp instant yeast
- 1 tsp sugar
- 2 tsp salt
- 2 tbsps olive oil
- to taste tomato sauce
- to taste oil and salt
- to taste basil
- to taste capers and anchovies
- to taste pizza mozzarella
- seasonings to taste

Steps
In the Bimby bowl, insert the flour, sugar, yeast, and water (leave some aside). Knead for 2 minutes at spike speed.
Add the salt and the remaining water. Another 2 minutes at spike speed.
Add the oil and knead for another 5 minutes at spike speed.
Transfer to the work surface and let rest for 30 minutes.
After resting, open the dough like a sheet and do a round of folds.
Let it rise until doubled.
Divide the dough into 6 balls and let them rest for about an hour.
Sprinkle the work surface with semolina and stretch our mini pizzas with your hands.
Season with tomato sauce, capers, and anchovies and cook for about 3 minutes.
Add the mozzarella and cook for another 2 minutes.
Take out of the oven and enjoy.
