SARDINIAN FREGULA WITH TUNA: Simple and Tasty

Ingredients

  • 1 1/3 cups Sardinian fregula (I use medium)
  • 14 oz tomato pulp
  • 3.5 oz natural tuna
  • 4 1/4 cups vegetable broth
  • 1 clove garlic
  • 2 fillets anchovies in oil
  • to taste olive oil
  • to taste fine salt

Steps

  • Heat a bit of olive oil in a pan and sauté 1 clove of garlic and 2 anchovy fillets for about 5 minutes. I left the garlic whole, but it can also be chopped.

  • Add the tomato pulp and cook for about 10 minutes, adjusting with salt.

  • Add the Fregula and cook for the time indicated on the package, adding vegetable broth from time to time.

  • Once the fregula is cooked, remove from heat and add the tuna.

  • Mix well and serve.
