Today I made Savory Sourdough Buns. They are perfect for a snack. Chiara often takes them to school from the bakery, so I decided to make them at home. And let me tell you, they are much tastier!!! If you don’t have sourdough, don’t worry, 5 g of fresh yeast or 2 g of dry yeast will do. I love focaccia, here are some more ideas to make it.

Ingredients
- 250 g remilled durum wheat semolina
- 250 g all-purpose flour
- 1 1/2 cups water
- 3 tbsps extra virgin olive oil
- 150 g sourdough starter
- to taste salt

Steps
Dissolve the sourdough in the water.
Add the flours and mix with a fork.
Add the oil and salt. Knead well until forming a homogeneous ball and let rise, covered with plastic wrap, until doubled.

Add the oil and salt and knead for another 10 minutes.
Form a ball, cover with plastic wrap, and let rest until doubled.
Divide the dough into 8 balls. Place 4 per tray. Brush them with some oil, cover with plastic wrap, and let rise for about 1 hour.
They should double in size.
Spread them with your fingertips and add a little salt and oil.
Add a bit of rosemary and bake at 392°F for about 20 minutes.
